i have noticed that with the short and fat green banana that they leave that stringy sticky thin skin like layer on it, i have also seen some keep the green skin itself! i&#039;m not sure if this is done with all the green cooking bananas or just some varieties. 

personally i don&#039;t understand why the skin or the sticky thin layer skin is eaten? if you have had this on a regular banana by accident, you can&#039;t even swallow the banana. the banana just sticks to your mouth. so why people cook with it?]]></description>
